Quick and easy recipes are the way to go y’all. Since we are trying a little bit harder to make smart eating choices with Truett, we’ve been trying to switch up the full blown 3 course meals with some more balanced, nutritious dinners, like this quick Taco Salad.
I realized that Truett loves lettuce, tomatoes, cheese, and of course meat so I thought, why not make a taco salad for him. He’s eaten traditional salads and we’ve eaten taco salads in town but I’ve never really made one at home. The thing I love about this, is that he’s getting some balance with this dinner. He needs more of that! Don’t we all, right? It’s all about cooking’ up good food y’all!
I love to visit the Kraft website for recipe ideas because I haven’t came across one that isn’t easy on the budget. And with college kids, sports, and every day bills, I need that too! I’d LOVE to know what time-savers you have in the kitchen and what budget friendly tips you have when it comes to chow time!

Kraft Foods Hub January
- 1lb. lean ground beef
- 1onion, chopped
- 1pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
- ¼cup water
- 10cups loosely packed torn romaine lettuce
- 2tomatoes, chopped
- 1cup KRAFT Shredded Cheddar Cheese
- 2cups tortilla chips, coarsely crushed
- ¼cup KRAFT Classic Ranch Dressing
- BROWN meat with onions in large nonstick skillet on medium-high heat; drain.
- ADD seasoning mix and water; mix well. Bring to boil. Simmer on medium-low heat 3 min.
- DIVIDE lettuce among 4 plates. Top evenly with meat mixture, tomatoes, cheese and crushed chips.
- Drizzle with dressing.
